Seriously BADASS Bread 101

Hi, this recipe has been amazing for me – It is one of my first creations and it works every time, it makes seriously BADASS bread.

There are a ton of techniques in this recipe which I will gladly give you more info on – sign up on the left of the page..

Starter (also known as a poolish, Pre ferment or sponge)
150 grams strong white bread flour
150 grams water
3 grams instant yeast

Mix together and allow to ferment. DO this at least the night before you want to bake this bread – otherwise don’t bother – This is an amazing way to improve your bread making.

Bread – make 2 400g loaves
150 grams of the starter made above
350 grams strong white bread flour
50 grams whole wheat flour
250g water
8 grams salt
3 grams instant yeast
Half a teaspoon brown sugar

Mix it all together in a bowl
Knead (use any methid you are comfortable with) it until it starts to come alive and feels springy Form into a ball and place into floured bowel covered in plastic leave to double in size in a draft free warm place(1 hour) Remove from bowl and fold into a ball again and leave to rise until double again ( 1 hour)

Take out and weigh and divide into 2 equal pieces

Shape into loaves or simply 2 rounds.

Leave loaves to rise – double in size (1 hour min)

Heat oven to 250 degrees
Just before adding loading score them with a sharp knife/ scissors/ razor blade When hot add the loaves an spray oven with water – if you don’t have a spray bottle leave a tray of water or ice blocks on oven to create steam, After 3 minutes spray the oven again Turn heat down slightly to 220 or so and bake until brown and the loaf sounds hollow when tapped underneath. Approximately 20 – 25 mins.
Leave to cool
Slice and enjoy

Times will vary depending how hot or cold the room is – if you want to speed fermentation up use warm water not cold – no more than 35 degs celcius or the yeast will die.

Flours vary so you may need a little more water than I have stipulated

My goal is to make sure that you start making the best Badass Bread around and impress the hell out of your friends and family.

I bake Badass Bread every week, hell I have even been known to supply Deli’s and market vendors with bread to keep my eye in.  I love Bread and make it whenever I can. I don’t just bake bread I craft it, I do everything by hand and  it is the most awesome feeling to take four basic ingredients (Flour, Water, Yeast and Salt) and create a loaf of bread – which if done right becomes the heart of the meal not a sideshow.

I love working with people and seeing how they embrace bread making so I have decided to share my knowledge and my love of Baking with you, so stick around read my posts and most importantly follow my instructions and get baking.
